Paleo Slow Cooker Dijon Ham

Slow Cooker Paleo Dijon Ham

As I continue my quest to figure out what’s best for my family, as I’ve said, I’ve looked into Paleo a bit. I was just sent the book  The Paleo Slow Cooker: Healthy, Gluten-free Meals the Easy Way to check out. The author is Arsy Vartanian and she also has the blog: RubiesandRadishes.com. As you can see from the picture above, I tried the Slow Cooker Paleo Dijon Ham. Next time I would either leave out the orange zest or use lest of it. It was too much of an orange flavor for me. One of the other recipes I really want to give a try is Provencal Vegetable Soup Paleo Style. There are a few recipes in the book that aren’t Slow Cooker, just an FYI.

Paleo Slow Cooker Dijon Ham

Paleo Slow Cooker Dijon Ham

Prep Time: 10 minutes

Cook Time: 6 hours

Total Time: 6 hours, 10 minutes

Yield: 8-10 servings

Ingredients

  • 5-6 lb ham
  • 1/4 cup apple cider vinegar
  • 1/4 cup honey
  • 1/4 cup coconut oil
  • 1 teaspoon thyme
  • 2 Tablespoons Dijon mustard
  • Zest of 1 orange
  • Pepper just before serving

Instructions

  1. Put ham in the slow cooker.
  2. Combine the rest of the ingredients, (except for pepper) making sure the honey and mustard are both well incorporated.
  3. Pour over ham in slow cooker.
  4. Cook on low for 6 hours.
  5. Add pepper just before serving.

Dirty Hands? No Problem! LYSOL No-Touch Hand Soap to the rescue!

Paleo Walnut Roasted Chicken Recipe and Book Review

Paleo CookbookI recently got the book 500 Paleo Recipes: Hundreds of Delicious Recipes for Weight Loss and Super Health to try out and review. While I don’t want to go 100% Paleo, it’s something I’m exploring and am happy to have this cookbook to try some recipes out. I tried the Walnut Roasted Chicken and will give you the recipe below. As I flipped through it the other day I saw that I also want to try Simple Sunflower Crackers and Pecan, Sundried Tomato, and Bacon Rice-a-Phony. There are definitely a lot more I’d like to try as well. Those were the three that jumped out to me on first glance through the book, though. I like that all the recipes have comments before them so that you can get an idea of what the author, Dana, was thinking. There’s a nice section in the front of the book explaining what Paleo is and talking about good and bad fruits and vegetables to eat. There is a lot of good information!

Sometimes she’ll mention an ingredient that doesn’t really follow the Paleo lifestyle, but she’ll let you know at the beginning of the recipe. Overall, I recommend this cookbook as a way to start your Paleo journey.

Paleo Walnut Roasted Chicken Recipe

Yield: 5 servings

Calories per serving: 671

Fat per serving: 52

Paleo Walnut Roasted Chicken Recipe

Ingredients

  • 4 pounds Whole Chicken
  • 1/4 cup olive oil, divided
  • 1 garlic clove, crushed
  • 1/4 cup finely chopped walnuts
  • 1/2 teaspoon minced fresh rosemary
  • 1 tablespoon minced fresh parsley
  • 1 lemon, quartered

Instructions

  1. Preheat oven to 375.
  2. In a small bowl, mix 3 tablespoons of the olive oil, garlic, walnuts, rosemary, and parsley.
  3. With your hands, gently loosen the skin on the chicken breast. Spread the walnut mixture evenly under the skin. Quarter the lemon and put it in the body cavity.
  4. Rub the chicken all over with the rest of the olive oil. Put it on a rack in a roasting pan and put it in the oven.
  5. Roast for 1 1/2 to 1 3/4 hours, or until the drumstick moves easily and the juice runs clear when the thigh is pierced to the bone.
  6. Remove the chicken to a platter. Remove the lemon wedges but put them on the platter with the chicken. Let it rest for 10 to 15 minutes before carving.
  7. Carve the chicken and serve with the lemon wedges to squeeze over it.

Veggie Tales: The Little House that Stood #Review #Giveaway

I got this video just in time! Little Man is suddenly in love with Veggie Tales. He only wants to listen to Veggie Tales in the car and he’s been making his older brother and sister watch with him at home. I thought that the show was very well done. I really liked the Little House that Stood better than The Good Egg of Gooseville. (It wasn’t bad, I just thought the Little House was better.)  I loved all of Larry’s fake stats in The Little House that Stood. My two favorites were:

“20% of all weather men are 30% wrong, 40% of the time.” and “85% of all floods are started by water.”

I also love all the familiar tunes you find throughout the show like Jaws and the Austin Powers theme. It brings something in for the adults. I think that The Veggie Tales Little House that Stood would be a great addition to an Easter basket this year.

BISSELL CleanView Vacuum Review

I was in total need of a new vacuum because my old one just didn’t want to pick things up anymore. I was super excited when Mom Central asked for bloggers to review the new BISSELL CleanView Vacuum. My friends were excited right along with me! I didn’t have a chance that day to get the vacuum put together because UPS came really late for some reason. A few days later, though, I pulled it out of the box and had it put together in less than 10 minutes. It’s super easy to put together, you just need to put two screws in!

Bissell Cleanview

I happened to strip my daughter’s bed that morning and there was baking soda on her bed from a late night getting sick incident. That baking soda was then all over her floor. The BISSELL CleanView cleaned it up in a flash!

I’m really liking the vacuum! I’m guessing because it’s suction is so strong right now, it almost self-propels itself forward so it takes some muscle to pull it back. My arm was a little tired after vacuuming my dining room today. I love  it, though, it doesn’t leave anything behind! Warning, I’m about to show you what gets picked up in my house… pretty gross. Keep in mind there are two girls with long hair, a dog and 3 cats that live here.

As you can see, my husband sucked up a Nerf dart. It may forever be a part of the vacuum now, because it won’t go down to the empty part on the canister. Besides that, emptying the canister is simple and quick!

Disney on Ice Rockin’ Ever After Review

My husband and I got to take the kids to Disney on Ice Rockin’ Ever After about a week ago. We were running late, so I unfortunately forgot my camera in the car. UGH! I tried taking pictures on my cell phone, but they just didn’t turn out at all.

While the kids really enjoyed the show, to be honest, it was not one of my favorites. It felt very rushed to try to fit in all of the stories. In order to make time to share all four stories, the endings were changed on Ariel’s, Rapunzel’s and Merida’s Stories. Ariel’s story ends with Eric kissing her right after the song Kiss the Girl. Rapunzel never gets her hair cut. Merida’s story has no bears and no real story, it just focused on her and her mother fighting and a quick mention of mending the bond. I’d personally rather see less stories told to see them represented more in their honest forms.

Disney on Ice FinaleThe skaters all did a great job. My favorite part was the brothers in Brave. They were comical and I really like the way they made it work.  Your children will really like the show. Buddy was very happy that he was able to go see Disney on Ice this time. Last year I took Cadence and her girl cousins, Aunt and Grandma as a special girl’s night and then the last Disney on Ice, all three of my kids were sick so we couldn’t go. From a pure entertainment standpoint, you and your kids will enjoy Disney on Ice. If you’re in the Chicago area, you can still catch a few shows at the United Center.
