I stuck to my menu pretty darn well last week. I had a couple meal fails, though. My slow cooker mac and cheese was too bland because I didn’t use a sharp enough cheese. My fried fish, the batter fell off and was just an oily, icky mess. The crockpot potato soup, though, was AWESOME! It was seriously the best potato soup I’ve ever had.

As you can see, I don’t really plan lunches for the whole week since I end up with a LOT of leftovers. Wednesdays I have lunch with my girlfriends. Mon-Fri breakfasts are simple: eggs, cereal, oatmeal, etc. I make the fancier breakfasts on the weekends.
Monday-au Gratin Ham & Potatoes
Tuesday– Enchilada Casserole
Wednesday– Magic Meatloaf
Thursday– Chicken Veggie Soup
Friday– German Potato & Sausage Casserole
Saturday– Breakfast: Apple Cinnamon Cream Cheese Swirl Loaf
Lunch: Black Bean Quesadillas
Dinner: Stromboli (didn’t get made last week)
Sunday– Breakfast: Baked Western Omelette Roll
Lunch: Taco Bell
Dinner: Birthday Party for Little Man

I wish I could start using a menu plan but I never can stick to it. Prob will be a good idea going forward once my finances are in order and I have a real grocery budget to work with again.
