I did great sticking to my menu last week. There was only one night I didn’t make dinner and that was on my chicken soup night. We got pizzas instead. Of course now I wish I’d made the soup since I’m sick. I take that back, I also didn’t make the black bean quesadillas on lunch Saturday but that was because we had so many leftovers I couldn’t justify making another lunch. My favorite meal of the week was the German Potato and Sausage casserole. I’m going to share the recipe this week. The kids’ favorite was the stromboli. It was SO nice to have dinner that night. There was no fighting, playing, or yelling. Just a nice quiet dinner where the kids couldn’t get enough of the food. The least favorite meal of the week was the baked western omellette. It wasn’t the omellette itself, because it turned out great. It was the onions and green peppers. Only 1/3 of the kids ate it without complaint. It was not a happy morning in our house. I will definitely reuse the recipe, though, without the veggies. SO much an easy way to make eggs! This week you’ll notice that two days are up to Daddy as to what they’re going to eat. I’m going to the Kenmore summit this Friday and I can’t wait! I’ll tell you more about it later today.

Sunday– Breakfast: Cinnamon Apple Walnut Muffins
Lunch: Taco Bell
Dinner: Steaks with Cheese Stuffed Potatoes

I could eat pasta fagioli several times a week! When I make it, I always make a TON and then portion it out for later. I actually do that with a lot of stuff!

I really do need to start getting into this meal planning idea. I tried once but failed miserably sort of sick of having the same thing over and over at my house. When money gets back to regular I will certainly be making sure I get a menu plan setup!
