Bacon Cheeseburger Meatloaf {Gluten Free}

Gluten Free Bacon Cheeseburger Meatloaf #UdisGlutenFreeYou may remember that we tried out some Udi’s Gluten Free products two weeks ago. The breads they sent us to try just were not our style but I wanted to do something with them. I decided to use the Udi’s Omega Flax & Fiber Gluten Free bread to make a meatloaf. Then inspiration hit and I decided to stuff the meatloaf with cheddar cheese and bacon. YUM!

Bacon Cheeseburger Meatloaf {Gluten Free}

Ingredients

  • 2 pounds ground beef
  • 3 slices Udi's Omega Flax & Fiber Gluten Free Bread toasted
  • 2 eggs
  • 1/2 cup ketchup
  • 1/4 teaspoon oregano
  • 1/4 teaspoon basil
  • 1/4 teaspoon garlic salt
  • 1/2 teaspoon minced dry onion
  • 1 cup cheddar cheese
  • 3-5 slices thick bacon cooked

Instructions

  1. Preheat oven to 350
  2. Crumble toasted Udi's bread with a food processor.
  3. Mix all ingredients together besides cheese and bacon.
  4. Place half of your meat mixture in the bottom of your pan.
  5. Cover with cheddar cheese and bacon.
  6. Now cover bacon and cheese with the remainder of your meat mixture.
  7. If you'd like, you can spread more ketchup over the top to create a glaze.
  8. Bake for 1 hour.

You can make this meatloaf traditional style by using 3/4 cups of bread crumbs instead of the Udi’s Gluten Free bread. Do you eat Gluten Free?

    We don’t eat gluten free, but we have a number of friends who do. It’s always good to have a repertoire of gluten free recipes that I can make and serve when we have them over, so thanks, this one looks like everyone will enjoy it!
