Hawaiian Bread Pumpkin Bread PuddingI can not believe we’re only a few weeks away from Thanksgiving. The holidays are coming FAST, which means so is this baby! With the holidays approaching, I was asked to make a recipe using King’s Hawaiian® Bread Rolls. I absolutely love that bread. I can just sit and eat it all alone. My friend said that she always uses King’s Hawaiian® for bread pudding and that I should give it a try as a pumpkin bread pudding.


King's Hawaiian Pumpkin Bread Pudding

Pumpkin Bread Pudding Recipe

Ingredients

  • 8-12 King's Hawaiian® Rolls torn into small pieces (I used 10)
  • 2 cups half-and-half or half milk and half cream
  • 3 large eggs
  • 2/3 cup granulated sugar
  • 2/3 cup brown sugar
  • 1 can 15 ounces pumpkin puree
  • 1 cup dried cranberries optional, I didn't use them
  • 3 tablespoons melted butter
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1 teaspoon vanilla
  • cinnamon sugar

Instructions

  1. Butter an 11x7-inch baking dish. Heat oven to 350°.
  2. In a bowl, cover the torn bread with the half-and-half; set aside. (Do not let soak long, the bread will turn to mush.)
  3. In another bowl, combine eggs, sugars, pumpkin, cranberries, melted butter, spices, and vanilla; blend well. Pour pumpkin mixture over soaked bread and stir to blend.
  4. Pour mixture into the prepared baking dish. Sprinkle top with cinnamon-sugar. Bake for 45 to 60 minutes, or until set.
  5. Serve with whipped cream, or vanilla ice cream.
  6. Serves 8.

The pumpkin bread pudding was a huge hit! I actually used 8 rolls to soak and just before mixing everything together, tore two more rolls into pieces and tossed them in. I think it helped to have more of a bread texture.

    I would have never thought to use King’s Hawaiian Rolls in a recipe like this. But it looks so yummy.
