There is nothing better than a big bowl of hot potato soup on a cold day! Potato soup is one of my favorite soups and this one will not disappoint! I found this recipe from Mama Loves Food on Pinterest and tried it for myself. You will need a 6-Quart Crock-Pot for this recipe. We have been making this soup for 9 years now and it’s still one of my favorites. I have made this potato soup for teacher appreciation meals and it goes over great. If you don’t have a large family or a large party, go ahead and half this recipe. With the cream cheese in it, it does not freeze well.

quick warning

Sometimes we want to skip some calories and go for lower fat items. DO NOT switch out the cream cheese in this potato soup with low-fat cream cheese. It does not taste good!

If you’re like me, you like soup when it’s cold. If you’re also like me, you don’t like to leave the house in the cold. Make sure you use grocery pickup to avoid freezing in the winter. I usually do Walmart grocery pickup but am giving Walmart + a try where I can get my groceries delivered free. With as many kids as I have, having someone else shop and bring us our groceries is a huge time saver!

  • 5 pounds russet potatoes
  • 1 large yellow onion
  • 1 head of garlic or minced garlic
  • 8 cups chicken stock
  • 16 oz cream cheese
  • seasoning salt
  • celery
  • carrots
  • bacon
  • cheddar cheese
  • green onions

Crockpot Potato Soup Recipe

Ingredients

Soup:

  • 5 lbs Russet Potatoes washed but NOT peeled. Diced into 1/2 inch cubes
  • 1 large yellow onion diced
  • 10 cloves of garlic you can use whole, crushed, or minced – I used 10 t of minced jarred garlic
  • 8 cups chicken stock
  • 16 oz cream cheese
  • 1 TBS seasoned salt or all-purpose seasoning I used Nature’s Season All
  • 1/2 cup diced celery optional
  • 1/2 cup diced carrots optional

Garnishes:

  • Crumbled bacon
  • Shredded cheddar cheese
  • Green onions I don’t like green onions so I left them off.

Instructions

  1. Add potatoes, onion, garlic, seasoning and chicken stock to slow cooker.
  2. Cook on high for 6 hours or low for 10 hours.
  3. Remove and puree the garlic cloves (if you used whole cloves), the cream cheese and 1/2 to 1/3rd of the soup, and then reintroduce to the remainder in the crock pot.
  4. Stir every 10-15 minutes until soup is well blended.
  5. Top with your choice of garnishes & serve!

    I am not an avid cook. I’m a little confused on the cream cheese. Do you cut it up and it slowly and stir to melt it?

      I just cut it into chunks and add it in. It will melt in the hot soup so then you can just stir it in.

    How crucial is it to puree some of the soup? Could I skip that step and just make sure the cream cheese blends in completely?

      My kids don’t like onions, so pureeing the soup for us makes them disappear. I don’t like it completely puree’d, though. I do like some chunks in my soup. I think as long as the cream cheese is incorporated it doesn’t matter if it’s pureed
