I wanted a quick and easy dessert and when I was in Walmart the other day checking out the Gluten Free items I saw Glutino Chocolate Chip cookies and decided to make the kids and I some ice cream sandwiches out of them. I had originally intended to make my homemade vanilla ice cream, but I knew I didn’t have time because of baseball so I just picked up some vanilla ice cream with the cookies.

Gluten Free Ice Cream Sandwiches

Ingredients

  • Glutino Chocolate Chip Cookies
  • Vanilla Ice Cream
  • Chocolate Chips

Instructions

  1. Take your ice cream out of the freezer to let it soften a bit.
  2. Place a large spoonful of ice cream between two cookies.
  3. Roll in chocolate chips.
  4. Return to freezer for a few hours so the ice cream hardens a little.
  5. Enjoy!

Glutino Cookies

I found my Glutino Gluten Free cookies in the baking aisle of my Walmart with a ton of other gluten free options. Have you checked out your local Walmart lately for gluten free items?

    We are at a high of 15 and a low of -7 in my area, so ice cream isn’t at the top of my list, but I love making homemade ice cream sandwiches. You can get so creative with the shapes and flavors, plus you can make enough for the whole family for the price of one from the grocery store!!
