One Pot Alphabet Vegetable Soup Recipe (and good cook Build Your Drawer Sweepstakes)

Note: I received 5 kitchen drawer items from good cook in order to create a one pot meal. All opinions are my own.
Good Cook 5 piece drawer

One thing I absolutely love is kitchen gadgets. My kitchen is full of them! I got a few from good cook that I’ve never owned and one that I had already. I originally wanted toe make some frozen custard for this post but I still haven’t gotten an ice cream maker, so expect that post soon! I went with the Alphabet Vegetable Soup, because my family loves my vegetable soup and it’s easy and all can be done in one pot! Plus it makes a LOT of soup, great for giving half to a sick neighbor and still being able to get a few meals out of it for your family. First let me tell you about the tools I received.

good cook utensil pot clip: Are you ever cooking and don’t know where to put that spoon? I have a spoon rest on my stove, but sometimes I’m making more than one thing at a time, so this utensil pot clip is great to keep my spoon right with the pot I’m using it in!

good cook 4 in 1 openergood cook 4-in-1 opener: I’ve owned a good cook safe edge can opener for a long time, but this one is more fancy, because it opens pop-tops, can open soda bottles with the grip-twist wrench, has a pull-tab lifter, and it is the can opener that creates no sharp edges!

good cook flip measuring spoon: This is one tool I already had in my drawer. It measures 1 and 1/2 teaspoons on one side of it and 1 and 1/2 tablespoons on the other side. So nice to have all in one!

good cook egg separator: I’ve always been the one that juggles the egg back and forth to separate the yolk from the white. I’ve also tried the water bottle trick once or twice. I’m really excited to give this tool a try. I haven’t had a reason to try it yet, though.

good cook SMART ice cream scoop: I also haven’t gotten a chance to try this, but I’m really excited about it. It seems sturdy and like it’ll scoop your ice cream (or custard like I plan to make) well. I’ll let you know!

Alphabet Vegetable Soup

One Pot Alphabet Vegetable Soup Recipe

Ingredients

  • 1 tablespoon olive oil
  • 1 onion diced
  • 1 tablespoon diced garlic
  • 3 carrots sliced thinly
  • 3 stalks celery sliced thinly
  • 3 32 oz boxes of chicken beef, or vegetable broth
  • 1 can corn drained
  • 1 can peas drained
  • 1 can green beans drained
  • 1 can black beans drained and rinsed
  • 1 28 oz can diced tomatoes
  • 1 tablespoon basil
  • 1 tablespoon oregano
  • salt and pepper to taste
  • 1/2 box uncooked alphabet pasta
  • Parmesan cheese optional

Instructions

  1. In a large pot place onions, garlic, and olive oil. Cook until onions are translucent.
  2. Add carrots and celery to pot and cook for about 5 minutes.
  3. Dump in the rest of the vegetables, spices, and broth into the pot. Cook on medium low for about 20 minutes.
  4. Add in the alphabet pasta to your pot. Continue to cook until pasta is soft.
  5. Sprinkle with Parmesan Cheese and serve with bread and butter.

I love how this is basically just a dump and cook recipe. Once you’ve chopped your onions, carrots and celery, everything else is just dump it in. I’m sure you could halve the recipe, but I like the huge batch so I can freeze some and have leftovers for lunches.

    I am always a fan of easy one pot meals, especially when they’re organic. That utensil clip is a must have!
