Deciding on Dinner Meal Planning Busy Family Edition November 18-24

Last week’s meal planning went pretty well. I had a few unexpected things come up so I had to shuffle dinners around a bit. I still have three meals leftover that I didn’t make that I will move over to the next two weeks of planning. (I plan for two weeks at a time.) I still have Chicken Burritos, Chicken Pot Pie, and Herbed Pork Chops to make. The only problem I ran into moving things was when I went to make my sweet and sour meatballs, two days late, the bean sprouts and fresh herbs had died.  We have a lot of busy nights this week so I need to make sure I’m on top of what we need to eat the next day ahead of time or I won’t get dinner done in time for our activities.

Monday: 

  • Ranch Chicken Fingers
  • Green salad

Tuesday: 

  • Parmesan Chicken Meatballs
  • Green Beans

Wednesday: 

  • Bacon Penne Alfredo
  • Green Salad

Thursday: 

  • Shepherd’s Pie Cupcakes

Friday: 

  • Chili Cheese Turnovers
  • Steamed Carrots

Saturday: 

  • Creamy Herb Pork Chops
  • Rice a Roni
  • Green beans

Sunday: 

  • Dinner with Kim?

    I need to get better at planning our meals. We end up having to stop at the grocery store for something from the deli or, worse yet, ordering takeout. I *want* to cook, I just need to get better at planning so I don’t feel overwhelmed in the evenings.

    I envy how organized you are with this meal planning. I usually decide sometime in the afternoon what I’ll eat for dinner that day!

    That Cowboy Casserole looks super good!! We don’t schedule meals like that I just make whatever.. but I love the idea of it. I think it would make my life a LOT easier!

    My husband is always nagging me to meal plan, but I honestly have a hard time with it because I really dislike cooking.

    I wished I could meal plan ahead like that. I have such a hard time deciding what to cook anymore that it’s pretty much a day by day. Your cowboy casserole sure looks good though.

    I’ve been doing meal plans again after a long hiatus {I was too sick to cook regularly for a long time} so thank you for the inspiration! I’m adding Ranch Chicken Fingers to our plan for this week!
