AmazingAvoCinco TableLast Friday I had a party at my house for myself and three other local Chicago bloggers where we got together to share avocado recipes that could be used for a Cinco de Mayo party. First of all, before I had this party, I’d not eaten an avocado. I used to mush them up to feed the kids as babies, but I didn’t try them myself.


The bloggers involved were Michelle of Honest and Truly, Tricia of Night Owl Mama and Theresa of Faith and Family Reviews. Unfortunately, Theresa couldn’t make it to my house, but we included her in the party through Skype. I had just received a photo studio kit, so I had it set up so we could all take pictures of our dishes. Unfortunately, my lovely cat decided to knock my bowl of soup off the table all over the white backdrop and white carpet! The backdrop survived, but the carpet has stains.

I had a real fun time coming up with avocado recipes and other dishes I was going to serve since I was the host. I had a triple slow cooker cookbook to review, so I made three recipes out of that for us all to try. I’ve shared all five recipes that I made for the party over the course of this week. I’ll come back and link their posts as they post them so that you can see them all. I know that avocado ice cream sounds strange, but it was REALLY good. I plan to make it for my family when I get her recipe. These are all really great recipes to try for Cinco de Mayo. What’s really cool, though, are that Avocados from Mexico are available year round, so you can try these recipes any time of the year. Here are some cool Avocado from Mexico facts:

  • Avocados are an extremely versatile fruit, they can be eaten alone, or used in a variety of tasty recipes – as the main ingredient or topper – from soups to salads to smoothies to desserts.
  • Fresh avocado in sandwiches, on toast or substituted as a spread in place of many other popular foods may help reduce your intake of calories, fat, saturated fat, sodium and cholesterol.

    just recently on Tv i saw them make deep fried Guacamole!! then dip in spicy sauce. you have to freeze guac first the batter it..deep fried yummyness!

    We love chilled Avocado Soup! The one we make is from my Mary Hart cookbook and is so easy! Its just 3 avocados, 1 1/2 c chicken broth, 1 1/2 cup light cream, 1 1/2 teaspoon salt, 1/4 teaspoon onion salt, 1/8 teaspoon white pepper, and 2 teaspoons lemon juice! Puree avocados with chicken broth and then mix in cream and seasonings! You should chill for at least two hours….we sometimes make the night before for our family get togethers! Add the lemon juice just before serving! It tastes so good during the summer!!!!

    I’m not sure if it warrants a recipe, we love grilling avocado. place halfves in aluminum foil with olive oil and whatever spices you like and serve as a side for steaks or whatever you’re grilling.

    For smooth guacamole, I add one table spoon of mayonnaise to every three avocados. That is my secret ingredient that everybody loves, and I do keep mayonnaise a secret.

    Baja Shrimp Tacos

    1 pound(s) (extra-large) shrimp, peeled and deveined
    2 teaspoon(s) Mexican seasoning or chili powder
    2 teaspoon(s) oil
    3 cup(s) bagged coleslaw mix
    1/3 cup(s) spicy or regular ranch dressing
    1/4 cup(s) chopped cilantro
    8 soft, taco-size flour tortillas, warmed
    1 avocado, peeled and diced
    Salsa , for serving

    Directions

    Heat contact grill. Meanwhile, toss first 3 ingredients in a bowl. In another bowl, mix next 3 ingredients.
    Place shrimp on grill; close and grill 2 minutes, or until cooked through.
    Top tortillas with slaw, then shrimp and avocado, and roll up.

    I don’t have a favorite, but this one looks yummy! Hass Avocado and Red Potato Salad Recipe
    2 lbs. red potatoes, cut into 1-inch cubes
    1 cup low-fat mayonnaise
    5 tsp. cider vinegar
    2 tsp. Dijon-style mustard
    3/4 tsp. ground black pepper
    3/4 tsp. salt
    4 green onions, sliced
    2 ripe, Fresh Hass Avocados, seeded, peeled and chopped into 1/2-inch pieces

    My favorite way to prepare avocado is to cut in half and grill on the BBQ. Then stuff them with mango salsa and serve with homemade blue corn tortilla chips. Yum!
