I’m finally back on track! I can’t wait to try some of these recipes this coming week! It’s time to get serious about eating at home and trying to lose weight. You’ll notice these are not particularly healthy recipes, but dinner is my “splurge” meal. For the most part I’m doing a shake for breakfast and lunch as a jump start on this weight loss journey.
Monday– Foil Packet Ranch Chicken
Tuesday– Slow Cooked Baked Potatoes with Chili and toppings
Wednesday– Pizza Pot Pie
Thursday– Chicken Alfredo Rollups
Friday– Carne Asada Tacos
Saturday– Kid’s choice
Sunday– Apple Pot Roast
I also can’t wait to start sharing recipes with you again. I feel like I haven’t cooked in months! May was so busy with trips, not that I’m complaining. It feels good to be home and getting back on track!

Your menu looks good but I have to ask- what are chicken alfredo roll ups? Just chicken w/the sauce in tortillas or do you add something else? Hehe my mind is putting in all kinds of yummy vegs like broccoli or red peppers or mushrooms or??? Inquiring minds want to know. 🙂 Have a great week.
