Another product of Pinterest meal. 🙂 This recipe comes from Real Mom Kitchen. I was nervous about this recipe because it has ginger in it and while it smells good, it seems anytime I try to do anything with ginger it doesn’t turn out. We all actually really liked this chicken! Monkey is the only one that gave me grief about eating it, surprisingly because she LOVES honey on her chicken. Once I drizzled a little extra honey over it she ate it up. This recipe is going into my rotation. It was REALLY easy to make and tasted great. The original author said she doubles the amount of sauce and serves it over rice. I missed the whole doubling of sauce note! It was fine without it, though. I did serve it over rice.

Honey Chicken Recipe

Prep Time 10 minutes
Cook Time 1 hour
Total Time 1 hour 10 minutes

Ingredients

Chicken

  • 2 lbs of diced uncooked chicken breast
  • 1/3 cup flour
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Sauce

  • 4 TB  butter
  • 1/4 cup honey
  • 3 TB lemon juice
  • 2 TB soy sauce
  • 1/2 tsp. ground ginger

Instructions

  1. Heat oven to 350. In a shallow dish combine the flour, garlic powder, salt and pepper.
  2. Dip each piece of chicken in flour mixture and coat evenly.
  3. Melt 2 tablespoons of butter in a shallow baking dish, large enough to accommodate chicken in a single layer.
  4. Arrange chicken in pan and bake uncovered for 30 minutes.
  5. Meanwhile, in a small saucepan, melt remaining butter and add honey, lemon juice, soy sauce and ginger.
  6. After chicken has baked the 30 minutes, turn each piece over and pour sauce mixture evenly over chicken.
  7. Bake another 30 minutes basting frequently.
