This should be an interesting week for me. I have to watch my “nephew” every day but Thursday. He’s 18 months old. I chose a lot of easy, kid friendly lunches and kind of easy dinners as well since I’m sure I’ll be beat by the time dinner rolls around. Wish me luck! Hoping everyone has a happy, healthy week!

Great menu! I like your format, too.
    What are Taco Melts?

It’s a Pillsbury recipe. Basically you make your taco meat and put all your toppings and meat into a Pillsbury Grands biscuit and make it into a little pouch and bake it. I’ve never made it before. I plan on trying it and featuring it.
