This recipe idea was given to me by a reader on Facebook. Thank you Lane! She didn’t give me exact amounts so I put in what I thought would work. I think next time I’ll put more crushed chips on the bottom of the casserole because I’d like a little more crunch. I also forgot to buy black olives, darn it! This was one dinner that went over well in my house. The kids said it was a little spicy, but they tend to say that about the taco seasoning I use. Eventually they’ll get used to it, right? I was pretty proud of myself because the majority of the ingredients that went into this were organic. I’ve been trying to buy what I can in Organic lately. I’m nowhere near 100% organic, nor will I ever be, but I feel like I should try to do what I can, when I can.

Easy Taco Bake #Recipe
Ingredients
- 1 lb ground beef
- taco seasoning
- 2 cups crushed tortilla chips/divided
- 1 can refried beans
- 1 cup salsa
- 1.5 cups Mexican shredded cheese/divided
- black olives
- tomatoes
- lettuce
- sour cream
Instructions

Brown ground beef and cook taco seasonings into it.

Preheat oven to 350

Place one cup of crushed chips in the bottom of an 8x8 baking dish

Heat refried beans then mix in salsa and half of cheese

Spread bean mixture over chips

Spread ground beef mixture over beans

Sprinkle olives and remainder of chips and cheese over the top of the casserole

Bake at 350 until cheese melts

Top with lettuce, tomatoes and sour cream

Probably 1.5-2 cups for the bottom.

That sounds really good.
This recipe look great and really easy to make. The only thing I would try differently is making it with ground turkey instead. I like the idea of a crunch with the chips 🙂
