This week feels like such a blur. I barely cooked, yet my kitchen became a disaster. Yesterday I’d had enough of eating out and having a mess. I got through about half of the mess in the kitchen and I made meatloaf, mashed potatoes and corn for dinner. I decided to make brownies, too, which Little Man ran in and asked if he could help.

He was at an awkward height so he had a hard time stirring and only got to help for about 10 seconds but he was happy that I let him have the chance. I had been staring at the box all day and decided to sort of make the brownie sandwich sundae that they had on it, except I had no whipped cream and I didn’t want to do it with two brownies, so it just became a brownie sundae. I made the brownies my absolute favorite way. I use coconut oil as the oil for them. It makes them so moist and has a nice taste.

    That looks DELICIOUS!! I rarely let my kids have brownie sundaes, but after they go to bed, my husband and I make them! We make them with caramel sauce.

    Awww that’s so sweet! And boy does that brownie sundae look good. That’s always one of my favorite options for dessert. I love it with the strawberry added, too!
