Hummus Stuffed Mini Peppers

It’s college football season. Do you know what that means? Tailgating! Sometimes you can’t make it to your game or you want to have a party at home.  I’m giving you a quick and easy finger food recipe for your www.TailgateAtYourPlace.com. Hummus Stuffed Mini Peppers

An easy finger food, hummus stuffed mini peppers have a small kick that will please the party goer!
Prep Time 15 minutes
Total Time 15 minutes

Ingredients

  • 2 cans of chick peas/Garbanzo beans
  • 1 cans of chick peas/Garbanzo beans- drained
  • Chipotle in can w/ adobo
  • 1/2 jar of roasted red peppers
  • 2 heaping tablespoons of Tahini sesame paste
  • 1 teaspoon Minced Garlic or fresh 2 cloves
  • 1 tablespoon Cumin
  • 1 teaspoon Coriander powder
  • 2 tablespoons Lemon Juice
  • Salt to taste
  • 1-2 pound bag mini sweet peppers

Instructions

  1. Drain one can of garbanzo beans and dump that with other beans (with juice from can) into a food processor.
  2. Take two peppers from the chipotle in a can and remove seeds. Add to garbanzo beans with 1 teaspoon of the adobo sauce.
  3. Add the rest of the ingredients to the food processor and blend until smooth. If you don’t have the right consistency, you can add just a little bit more lemon juice.
  4. Cut the tops off and de-seed your mini peppers.
  5. Spoon hummus into peppers or place hummus into a pastry bag and pipe into peppers. Serve.
