Homemade Rice Pudding Made with Lactaid Milk

Rice Pudding

Back in May I talked about how I took part in a webinar with Melissa d’ Arabian, to learn more about LACTAID® Products. I let you know that both my son and Father-in-law have lactose intolerance issues. I was asked to come up with a recipe that they could enjoy using Lactaid milk. Last night I decided to give rice pudding a try. I’d never made pudding from scratch before so it was an experience. It’s definitely not something you could do while multi-tasking, because there is constant stirring needed and even when not stirring, you want to watch it so that it doesn’t burn.


Before I get to the recipe, though, I wanted to let you know that Melissa d’Arabian made an appearance on the TODAY Show to talk about Lactaid and share a recipe. You can visit the Today show website if you’d like to see her recipe for Chicken with lactose-free creamy mushroom sauce. You can also visit the Lactaid website to get some good lactose free recipes. There were a few I wanted to try but didn’t have the time or ingredients on hand to make them.

Rice Pudding using Lactaid

Homemade Rice Pudding Made with Lactaid Milk

Ingredients

  • 1 cup Instant Rice
  • 2 1/2 cups Lactaid Milk divided
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Cinnamon
  • 1/4 teaspoon Nutmeg
  • 1/2 cup Granulated Sugar
  • 1/4 cup Raisins optional, I left them out
  • 2 large Eggs slightly beaten
  • 1/2 teaspoon Vanilla

Instructions

  1. In saucepan, combine rice, 2 cups of Lactaid milk, salt, cinnamon, nutmeg, sugar, and raisins. Bring to a rolling boil, stirring constantly.
  2. Reduce heat; boil slowly for 10 minutes, stirring occasionally.
  3. Mix eggs with remaining 1/2 cup of Lactaid milk. Slowly add to hot mixture, stirring vigorously with a fork.
  4. Cook over medium heat until thickened. Add vanilla. Let cool for 10 minutes.
  5. Note: If you are not lactose free, you may substitute regular milk in place of the Lactaid milk.

    I love rice pudding but have never made it before. No one in my home has lactose problems but my friend does. I will have to make this for her.

    I have tried many recipes for rice pudding and have never been happy, I cant wait to try yours!!!
