Pear and Apricot Guacamole #AmazingAvoCinco

I was asked to host a party for a few bloggers trying out different recipes with avocados and post them. I’ll tell you more about that later this week, but for now I wanted to share the recipes. This recipe my husband totally made up by himself. He said “what if you made a dessert guacamole with avocado, cream cheese, pears, dried apricots, and lime juice?” So I took the challenge and tried it. He said he actually REALLY liked it, but he thinks the apricots need to finely chopped. Apparently I didn’t chop them small enough for him.

Pear and Apricot Sweet Dessert Guacamole

Ingredients

  • 1 large avocado
  • 8 oz cream cheese softened
  • 1 pear finely chopped
  • handful of dried apricots

Instructions

  1. Add avocado and cream cheese to your stand mixer bowl and blend until smooth.
  2. Add in finely chopped pears and apricots.
  3. Chill for at least an hour.
  4. Serve with graham crackers. My husband also liked the dip with tortilla chips, he liked the sweet and salty combination.
