Making a Neighbor a Meal plus a Paula Deen #Giveaway

Times are tough and for some people, a nice friendly meal makes their day a little bit brighter. My go to meal for family or friends that are in need is lasagna casserole. I like to make the lasagna, a salad, garlic bread and some kind of dessert. I will also sometimes throw in a breakfast casserole so that they have something the next day as well.


The following recipe for lasagna casserole made 3-8×8 casseroles. 1 tray was more than enough to feed my family of five for one meal. Packaging in smaller containers makes it easier to freeze and reheat. It’ll make sure the family can have at least two more full meals out of one meal!

Lasagna Casserole

Ingredients

  • 1 box Campanelle Noodles
  • 1/2 pound Italian Sausage
  • 2 jars Marinara Sauce
  • 15 oz Ricotta Cheese
  • 8 oz Mozzarella Cheese
  • 2 eggs
  • 1/2 cup Parmesan Cheese

Instructions

  1. Preheat oven to 350.
  2. Boil water and cook noodles until to desired softness.
  3. Brown Italian Sausage and mix with marinara sauce.
  4. Scramble eggs. Mix all ingredients together except 1/4 cup of Mozzarella Cheese and 1/4 cup of Parmesan Cheese.
  5. Sprinkle remaining Parmesan and Mozzarella Cheeses on top.
  6. Bake for 20 minutes.

Dinner was served on Paula Deen’s 4 pc Southern Gathering Chestnut Dinner Set. I love the colors of it. For dessert I decided to make a blueberry bundt cake using a Paula Deen fluted cake pan. I was inspired by my new Blueberry Paula Deen 15 pc  Cookware Set. I think this recipe would have been good with maybe a lemon frosting on top of it.

Blueberry Bundt Cake

Ingredients

  • 2 1/4 c. flour
  • 1 c. sugar
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 2 eggs beaten
  • 1 c. buttermilk
  • 3/4 c. vegetable oil
  • 2 tbsp. orange juice
  • 2 c. blueberries

Instructions

  1. Preheat oven to 350 degrees.
  2. Grease an 12-cup bundt pan.
  3. In medium bowl combine dry ingredients.
  4. In a large bowl blend together eggs, buttermilk, oil and orange juice.
  5. Add dry ingredients and mix thoroughly.
  6. Carefully fold in blueberries.
  7. Pour into prepared pan.
  8. Bake in a 350 degree oven for 45 minutes or until toothpick inserted in center comes out clean. Cool in pan on wire rack. Garnish with whipped cream and additional blueberries.
