Enchilada Casserole #Recipe

This is one of my husband’s favorite recipes. I’ve been making it since 2002. I found it in Muscle and Fitness magazine when I was trying to get fit for a fitness competition. (What was I thinking?!) Anyway, this is a really easy recipe to make and it’s great with tortilla chips and to use it as kind of a dip.

Enchilada Casserole Recipe

Ingredients

  • 1 lb low-fat ground beef
  • 1 pkg dry taco seasoning mix
  • 1/2 cup water
  • 15 oz can refried beans
  • 15 oz can enchilada sauce
  • 10 oz can Cream of Mushroom Soup
  • 10 oz can Cream of Chicken Soup
  • 1 1/2 cups shredded cheddar cheese
  • 12 corn tortillas
  • Non-stick cooking spray

Instructions

  1. Preheat oven to 350.
  2. Brown your ground beef in a skillet. Drain and rinse. Add taco seasoning and water. Simmer for 10 mins.
  3. Meanwhile mix beans, enchilada sauce and soups together. When meat is done, add to bean and soup mixture.
  4. Spray 13x9 pan with non-stick cooking spray. Cover the bottom of pan with meat mixture. Layer 6 tortillas. Layer of meat mixture, then cheese, then 6 tortillas. Finish off with a layer of meat mixture and add cheese to top.
  5. Bake for 30 minutes or until cheese is bubbly. Allow to stand for 5-10 minutes before cutting into it.

    That sounds so good, we love enchiladas and this seems so simple to make!

    Yum! I think this is something all three kids would eat (rare!). So glad to have something new to try.
