Do you ever need a quick breakfast or snack? I was visiting Blah to Ta-Daa and found their Breakfast in a Mug recipe. I was craving eggs that night so I figured I’d give it a try. My biggest problem was that I had no butter. I gave the recipe a try using Pam spray and it worked wonderfully.
Breakfast In A Mug
- 2 T Butter
- 1 T Milk
- 2 Eggs
- Salt & Pepper to Taste
- 2 T shredded cheese (I left out the cheese)
1.) Place the butter in a 12-ounce microwave-safe mug. Microwave on high about 20 seconds until melted and sizzling.
2.) Add the milk, eggs, salt and pepper, and whisk with a fork. Microwave on high about 30 second until it just begins to set. Give it a quick stir with a fork. Microwave for about 30 seconds until almost completely set but still moist (your microwave may cook faster or slower, so be sure to check the eggs occasionally while cooking). In our microwave I needed another 30 seconds.
3.) Remove eggs from microwave and sprinkle with cheese. Let sit for one minute to let cheese melt. This is as puffy as any souffle when it’s done!
The awesome part of this recipe is having no pan to wash!! The eggs popped right out of the mug with no residue.

I’ve done this before.. I grew up using bowls, because on rare occasions the eggs would stick. You could add pieces of ham or bacon, (or bacon bits) to it as well. I agree with the above poster for Hungry Girl mug eggs. Delish!

I used to do this all the time when I was a teenager and had to get to my afterschool job and would miss dinner! It was in one of those old 80’s how to microwave anything cookbooks that came with our first microwave when I was little. Nice reminder, I’ll have to remember this for the next time I have a egg craving!

I have been zapping my eggs for english muffin sandwiches for years… I spray a little pam in the bowl, zap & have a nice round egg for my sandwich ๐
Andrea @ The Creative Junkie says
I do something similar. I spray a bowl with PAM and then I crack one egg and one egg white into it, scramble it with a fork and then cook on High in the microwave for one minute, 20 seconds. It comes out perfectly cooked and in the perfect circular shape to put on my bagel thin!

My hubby does this when he’s short on time and wanting eggs. I usually break out the frying pan for me, no idea why. ๐

Seriously cool, do they explode in the microwave though? That’s what I’d be afraid of…I hate cleaning microwave mess.
Paula says
I’ve only made them once so far and there was no exploding.

I do something similar for my son a lot. He is an egg eating monster!

I can not get over the grossness of putting an egg in the microwave. Maybe it is because I am weird about eggs anyway, but I am not a microwave person. In fact I think the ONLY thing that goes in there around here is popcorn, LOL

I need to try this because I am always in a pinch for a fast breakfast before work. Need to try this. Thanks for sharing.

That looks delicious and so easy, I used to make eggs in the microwave

my dad’s been doing this for years, btu he uses a bowl. the man can poach an egg in the microwave! hahaha.
i love the idea of using a coffee cup though, because the boys like the pieces to be thicker, so i can cut bigger chunks from a mug!
thanks love!

I tried this once and managed to somehow mess it up . . . resulting in an egg explosion all over my microwave!
