I was trying to think of something really easy to make tonight for two reasons: 1) I have had a migraine all day 2) I wanted the kids to help me out tonight. I had something similar to this at Costco and wanted to try to recreate it myself. I never did get the kids in the kitchen to help me tonight because Little Man was throwing a fit for quite a long time. I finally got him settled in playing with the older two upstairs and I just wanted to leave them be and not upset the balance!

Ingredients:

  • chicken
  • broccoli
  • ranch dressing
  • crescent rolls

I was given some Virgin Coconut Oil to review for my blog from Tropical Traditions. (Head over to the post and enter for a chance to win some coconut oil of your own!) I decided to try to use it tonight to sauté my chicken. It worked extremely well! There was no sticking that I get when using vegetable oil.

Directions:

  1. Preheat oven to 350.
  2. Cut up chicken breasts and sauté until lightly browned.
  3. While chicken is cooking, steam the broccoli.
  4. PhotobucketOnce chicken and broccoli is done cooking, combine in a bowl with ranch dressing.
  5. Add approx a tablespoon of mix on to a crescent roll and roll it up.
  6. Bake for approx 10 minutes until golden brown.

Sorry I don’t have actual amounts used or exact timing. This was the first time I made this recipe and I just threw things together. I made it with 4 chicken breasts, half bag of broccoli and probably 1.5 cups of ranch dressing. I spit the chicken in half right after cooking to make another dinner this week and I STILL had a ton of leftovers of the mix.

    Yummy Broccoli!! That does sound really good but I’m just iffy on the heating ranch dressing- I have never done that before!
    ( I have the same dish set as you :))

      It is super simple. Not all of mine turned out as pretty as the picture, but they were yummy. 🙂

    that looks quite tasty.. and quick! I bet I could make these in my toaster oven, I could probably even sub Thousand Island for my hubby’s portion! Hmmm adding to my dinner folder!
