An easy finger food, hummus stuffed mini peppers have a small kick that will please the party goer!

Ingredients
2cans of chick peas/Garbanzo beans
1cans of chick peas/Garbanzo beans- drained
Chipotle in can w/ adobo
1/2jar of roasted red peppers
2heaping tablespoons of Tahinisesame paste
1teaspoonMinced Garlic or fresh2 cloves
1tablespoonCumin
1teaspoonCoriander powder
2tablespoonsLemon Juice
Salt to taste
1-2poundbag mini sweet peppers
Instructions
Drain one can of garbanzo beans and dump that with other beans (with juice from can) into a food processor.
Take two peppers from the chipotle in a can and remove seeds. Add to garbanzo beans with 1 teaspoon of the adobo sauce.
Add the rest of the ingredients to the food processor and blend until smooth. If you don’t have the right consistency, you can add just a little bit more lemon juice.
Cut the tops off and de-seed your mini peppers.
Spoon hummus into peppers or place hummus into a pastry bag and pipe into peppers. Serve.
