Roasted Brussels Sprouts with Bacon, Shallots, and Garlic

Ingredients

  • 1 lb Brussels Sprouts cored and halved
  • 4 slices thick-cut bacon chopped
  • 1 large shallot cut into thin slices and separated
  • 4 garlic cloves smashed
  • 2 tablespoons extra virgin olive oil
  • salt and pepper

Instructions

  1. Preheat oven to 425.
  2. Line a baking sheet with foil and then spray liberally with non-stick spray and set aside.
  3. Combine Brussels Sprouts, bacon shallots, garlic, oil, salt and pepper in a large bowl then toss to combine.
  4. Transfer to prepared baking sheet then spread out and turn sprouts cut side down.
  5. Place as much of the bacon and shallots on top of the sprouts as possible then roast for 20 minutes or until golden brown and caramelized.
  6. Mine didn't get as crispy as I wanted so I threw them under the broiler for 3 minutes.
