Potato and Sausage Casserole #Recipe

I found this recipe from The Menu Mom on Blog Frog. I thought it was a good combination of three different countries: German, Irish and Polish. :) I changed up the recipe a bit based on what I would have liked. I made it with one can of sauerkraut and only one pound of Polish sausage. I think it needed more of both, so I doubled it in the recipe below.  I couldn’t find frozen Potatoes O’Brien so I made my own to use in this recipe. I really liked it.

Potato and Sausage Casserole Recipe

Ingredients

  • 1 bag frozen Potatoes O'Brien w/onions and peppers, thawed (or use my recipe for Potatoes O'Brien )
  • 2- 14 oz cans Sauerkraut, drained and rinsed
  • 1 10 3/4 oz can Cream of Potato Soup
  • 1 1/3 c half and half
  • Paprika
  • 2 lbs cooked Polish Sausage cut into pieces

Instructions

  1. Heat oven to 375. Spray 13x9 glass dish with cooking spray.
  2. In baking dish mix potatoes and sauerkraut.
  3. In medium bowl, mix soup and half and half.
  4. Stir soup mixture into potato mixture and mix well. Sprinkle with paprika. (I forgot the paprika when I made it.)
  5. Bake 20 minutes. Arrange sausage pieces over potato mix, pressing lightly into the mix.
  6. Bake 25-30 minutes longer.

I saw a recipe for Blarney Stone Cookies on Fun On a Dime today. I didn’t have a couple of the same ingredients so I changed it up just a bit.

Ingredients:

  • 1 c Butter
  • 3/4 c brown sugar
  • 1/4 c white sugar
  • 1 pkg pistachio pudding
  • 2 eggs
  • 6 drops of green food coloring
  • 2 1/2 c flour
  • 1 t baking soda
  • 2 c chocolate chips (she used butterscotch chips. I didn’t have any)
  • (1 c finely chopped pecans- I didn’t add)

Directions:

  1. Preheat oven to 350. Cream together butter, sugars and pudding.
  2. Add eggs and food coloring
  3. Add flour and baking soda
  4. Add chips
  5. Roll in tablespoon sized balls and bake for 8-12 mins; until bottom is starting to brown.
  6. Cool and serve

They were very yummy! I only allowed myself one since I gave up treats for Lent. I had to test it, though, to make sure I wasn’t giving you a nasty recipe!

St Patrick’s Pot of Gold Jell-O

Very simple St Patrick’s Day recipe that makes the kiddos happy. You can serve this at the end of your rainbow cupcakes.

Ingredients:

  • 3-ounce box of lemon-flavor gelatin
  • 6 lemons (or limes)

Directions:

  1. Line an 8-inch square baking dish with plastic wrap, leaving several inches of overhang on each side (this will make removing the gelatin easier). (Make sure you don’t use 2 pieces of overlapped wrap because the jello just seeps in between the layers and makes a mess!) Combine a 3-ounce box of lemon-flavor gelatin and 1 cup of boiling water in a medium bowl, stirring until the gelatin is dissolved. Stir in 1 cup of cold water, then pour the mixture into the baking dish. Cover the dish with plastic wrap and chill the gelatin for 4 hours or until firm, then slice the gelatin into 1/2-inch cubes.
  2. Cut off the top quarter of each of 6 lemons, then, without cutting into the fruit, slice a thin layer of peel from the bottom of each one to help them stand upright. With a small knife, cut around the inside of each lime’s rind to loosen the pulp, then spoon it out to make a shell.Pot of Gold, St Patrick's Recipe
  3. Fill each lemon pot with gelatin gold. Makes 6.

St Patrick’s Day Rainbow Cupcakes

Treat your little ones to the rainbow and maybe add in a pot of gold as well!

There are many options that you can do with this cupcake. I was originally going to make rainbow cake pops and stick them in foam in the shape of a rainbow but I couldn’t find my foam. I also made some in the Wilton Mini Bundt Pan and when you cut them in half they look like a rainbow!

Ingredients:

  • White cake mix
  • Food coloring (red, blue, green, and yellow)

Directions:

  1. Prepare your favorite white cake mix, then divide the batter evenly among six small bowls. Following the chart below, dye each bowl of batter a rainbow color.

    Purple 9 red and 6 blue drops
    Blue 12 drops
    Green 12 drops
    Yellow 12 drops
    Orange 12 yellow and 4 red drops
    Red 18 drops

  2. Line 16 muffin pan wells with baking cups or spray with non-stick cooking spray. Evenly distribute the purple batter among the cups, then the blue, and so on, following the order shown. As you go, gently spread each layer of batter with the back of a spoon to cover the color underneath. (make sure if you’re using the cake pop pan or bundt pan that you start your colors with red so red is on top when you flip them over.)
  3. Bake the cupcakes according to your recipe directions. Before serving, remove the paper wrapping, and if you like, top each cupcake with a whipped-cream cloud.

St Patrick’s Day Green Jell-O

This is a versatile Jell-O that works well with either St Patrick’s Day or Christmas. All you have to do is change the color of the cherries. If you use red cherries it makes your mold look like a wreath.

Ingredients:

  • 2 small boxes or 1 large box Green Jell-o (lime flavored)
  • large can of pear halves
  • jar of green or red maraschino cherries
  • 1 large or 2 small Cool whips (you will only need approx 3/4 of the Cool Whip)
  • 8 oz cream cheese
  • Gelatin Mold (like the kind from Tupperware)

Directions:

  1. Drain pear juice into small sauce pan and bring to a boil. Stir in jello. Put Jello in freezer or fridge while you move on in the process. Just be sure your Jello only becomes cool but not firm.
  2. Smash the pears with a fork or a Pampered Chef Mix n’ Chop
  3. Place a cherry in every other bump of your mold.St Pat's treats, jello, green, Tupperware
  4. Mix 1 heaping T of Cool Whip with the cream cheese until smooth. Add in cool Jello. Then add in the remaining Cool Whip (only use about 3/4 of a large container.)  (This is a family recipe that’s just told to the next person without real measurements, sorry!)
  5. Lightly fold pears into the mix. Pour into your mold. Jell-o, jello, St Patrick's Day, Christmas
  6. Refrigerate for a few hours until solid. Flip upside down on plate and serve.
