Boo! Ghost Mini Pizzas for #Halloween #recipe

Ghost, Halloween, Recipe I was originally going to make Mummy pizzas, but I made them on Bagel Thins and the mouth caved in, so I decided it was now a Ghost pizza! The Ghost pizza is the same concept as the English muffin pizza, but just made with the new Thomas’ Bagel Thins.

I love the new Bagel Thins! With trying to count calories, they’re a great substitute to regular bagels and fun to decorate with your favorite pizza toppings and eat! I used the 100% Whole Wheat bagels for my pizzas but they have several options:

  • Blueberry
  • Plain
  • 100% Whole Wheat
  • Cinnamon Raisin
  • Everything Bagels

Ingredients

  • Thomas' Bagel Thins
  • Pizza Sauce
  • Mozzarella Cheese
  • Black Olives
  • (optional- your favorite pizza toppings, but then it won't be a ghost.)

Instructions

  1. Preheat your oven to 400
  2. Spread 2 tablespoons of sauce on each bagel thin
  3. Sprinkle with cheese and add two slices of black olives for eyes
  4. Bake for 10-12 minutes or until warm through

#Halloween Eyeball Bites

Betty Crocker Brownies This is a pretty quick and easy Halloween treat. I made mine using a BabyCakes Cake Pop Maker. There are other products out there like the Cake Pop Pan that would get you the same result. I wasn’t thinking when I made these eyes. I was going to make round eyeballs but wanted to use my brownie mix. Well, brownies don’t rise. So I got half balls. If you use a cake mix, though, you could get round eyeballs to make these treats.

Halloween Eyeball Bites

Ingredients

  • Cake Pop Maker of some kind
  • Your favorite brownie mix
  • White Candy Melts (such as Wilton's)
  • Red Candy Melts
  • Chocolate Chips

Instructions

  1. Preheat your Cake Pop Maker or oven, depending on how you will make your brownies.
  2. Mix your brownie ingredients together.
  3. Spoon 1 T of brownie mix into the cake pop maker.
  4. Open the maker the first time the light goes off and then re-close until light comes on again. (Brownies take longer to cook than cake.)
  5. Let brownies cool.
  6. Melt your white candy melts per package directions.
  7. Dip your eyeballs in the white candy and while still wet poke a chocolate chip, tip side down, into the dome of your eyeball.
  8. Put a handful of red candy melts into a cake decorating bag or plastic bag and melt in microwave. Snip the tip of the bag and run squiggly lines over the eyeballs to make them look bloodshot.

Frankenstein Brain #Halloween Jell-O #Recipe

Halloween RecipeWhen we had our Halloween Party, this is another dessert I served up. It was delicious! It rivaled my Mother’s in law green jell-o recipe I posted. Try not to be in a rush while making this mold! I didn’t leave the Jell-o in the mold long enough and it flopped in the middle. You can still get the Jell-o Brain Mold for free, all you have to pay is $2.95 s/h.

Frankenstein Brain Halloween Jell-O Recipe

Total Time: 4 hours, 10 minutes

Yield: 8

Serving Size: 1/2 cup

Ingredients

  • 2 pkg (6 oz each) Lime Jell-O Geletin
  • 1 3/4 cups boiling water
  • 3/4 cups cold water
  • 1 pkg (8 oz) Cream cheese, softened
  • 1 can (8 oz) crushed pineapple, drained
  • 10 crushed pretzels

Instructions

  1. Add boiling water to gelatin mixed in medium bowl; stir 3 minutes until completely dissolved, Stir in cold water. Gradually whisk in cream cheese until well blended.
  2. Refrigerate 30 minutes or until slightly thickened. Stir in pineapple and pretzels. Refrigerate 4 hours or until firm.
  3. Unmold gelatin onto play just before serving.

Tips for removing your brain: Dip mold in warm water, just to rim, for 15 seconds. Lift from water and gently pull gelatin from edge of mold with moistened fingers. Place moistened serving plate on top of mold. Invert mold and plate and shake to loosen geletin. Gently remove from mold.

Recipe came from Kraft Foods. I got it in my brain mold box when it came in the mail.

#Halloween Chocolate Pudding #Recipe

Two weekends ago I had a little Halloween party and this was one of the desserts I served. I wanted to make a full on dirt cake but didn’t have the time or all the ingredients. Instead I made this creamy Chocolate pudding grave.

Halloween Chocolate Pudding Recipe

Ingredients

  • 1 Jell-o Chocolate Pudding Mix
  • 2 cup Milk
  • 1 container Cool Whip
  • 1 pkg of Oreos

Instructions

  1. Mix pudding mix with milk as per box instructions
  2. While pudding is setting up, crush Oreos or chop in blender
  3. Mix in pudding, Cool Whip and 3/4 of your Oreos.
  4. Top with remaining crushed Oreos
  5. You can add a skeleton to the inside to make it creepy and decorate with gummy worms, cookies like gravestones, candy pumpkins, etc.

My worms were actually made out of Jell-O. I used a tall glass, put straws in it and then poured a mixture of Jell-o, knox geletin and water into the straws. Once they set up you can squeeze the worms out of the straws. It was a LOT of work for little return so I gave up. If you look closely, you can see the hand of my skeleton sticking up out of the dirt. This was a huge hit! It’s not a strong chocolate flavor like straight up chocolate pudding since it has the Cool Whip in it. That makes it yummy to me, because I don’t like a strong chocolate flavor.

Pumpkin Cupcakes #halloween

I saw these cute little pumpkins over on Emily’s site: Busy Mommy. I put her picture as the first picture of the post because I wanted you to see how pretty they’re supposed to look! Mine did not turn out as pretty.

Ingredients:

  • Boxed mix or your favorite cake recipe
  • frosting
  • coloring if you want your cake colored on the inside (I tried to make orange but with my lighting I could not get a good pic of it)
  • Orange sugar crystals
  • tootsie rolls (I thought I had a lot, turned out I had 3 on hand. whoops!)
  • Wilton 12-Cavity Mini Bundt Pan

Directions

  1. Spray your pan with non-stick spray
  2. Bake your cake mix according to directions
  3. Pop your little cakes out. If you overfilled like I did, you can cut the bottoms off.

  4. Put frosting on bottom of one cake and stick the bottom of another cake to it to form a pumpkin shape.
  5. Frost entire pumpkin
  6. Form tootsie rolls into stems and stick in the top hole of pumpkin
  7. Sprinkle orange sugar over your pumpkin

I don’t know what I was thinking as I was putting this together. I barely took any pictures. As you can see above I tried putting a face on one of the pumpkins with the Wilton Black Sparkle Gel and it dripped. It was just not a good project for me. The kids still loved them, though. Mummy Meatloaf @familyfun

Mummy Meatloaf

I got this recipe out of Family Fun Magazine. Theirs turned out MUCH nicer than mine. You’re supposed to use black olives for the eyes and I didn’t have any. My meatloaf ended up dry because I cooked it on the cooling rack so the grease wouldn’t be pulling the mummy apart. It didn’t help, he still lost his shape. Not sure what to do differently. By using the green olives for the eyes, I found that I really like green olives with my meatloaf. :)

Ingredients

  • Meatloaf from your favorite recipe (ours used about 2 pounds of meat)
  • White American cheese
  • Olive slices

Instructions

  1. Make your favorite meatloaf recipe and shape the loaf to resemble a mummy’s body with crossed arms. Bake the loaf until it’s cooked through.
  2. Let it rest about 3 minutes, then lay 1-inch-wide strips of American cheese across the body as shown, leaving a narrow space on the head for the olive slice eyes. Trim any overhanging cheese with scissors and return the mummy to the still-warm oven to slightly melt the cheese, about 1 minute.

Frankenstein Marshmallows #halloween

Ingredients:

  • Marshmallows
  • Green Wilton Candy Melts
  • Black Wilton Candy Melts
  • Lollipop Sticks
  • decorating bag or black glitter paint

Directions:

  1. Stick lollipop sticks into your marshmallows
  2. Melt the green candies and dip marshmallows in the candy
  3. Let harden for a few minutes
  4. Melt the black candies and dip just the top of the marshmallow into the black for the hair
  5. Either put some of the black candy melt into a decorating bag or use glitter gel paint to make the faces
  6. Enjoy :)

Jack-o’-Lantern Sandwich Bites

Jack-o'-Lantern Sandwich Bites

I found this recipe in the Women’s Day Halloween Special, too, and had to give it a try! I LOVE making special Halloween treats so I’m having a blast trying out all these recipes.

Ingredients:

  • 1 box (15 oz) refrigerated pie crusts
  • 8 oz thinly sliced Black Forest or Virginia Ham
  • 8 oz thinly sliced Cheddar or Swiss Cheese (I used Cheddar)
  • 1 large egg, slightly beaten

Directions:

  1. Heat oven to 425ºF. Line a rimmed baking sheet with nonstick foil.
  2. Unroll pie crusts. Cut each crust into 24 pumpkin shapes with a 3-in pumpkin cookie cutter. Using a 1/2-in triangular cookie cutter or a sharp knife, cut out eyes and a nose from 12 of the cutouts. (My cutter must have been bigger than 3″ because I only was able to make 16 pumpkin shapes and that was with re-rolling scraps of crust)
  3. Using a 2-in. round cutter, cut 24 rounds from the sliced ham and 24 rounds from the sliced Cheddar.

  5. Place 2 slices of Cheddar in the center of each of the 12 solid pumpkins; top each with 2 slices of ham. With a small brush, brush beaten egg around edges. Top with remaining pumpkins with cut-out faces, carefully pressing on edges to seal. (I did not seal mine well enough, as you will see below.)
  6. Place on prepared baking sheet. Brush tops with beaten egg. Bake 12-15 minutes until light golden. let cool on rack 5 minutes before serving.

These turned out really yummy. They took a long time to prep, but they’d be fun for a party as  finger snacks. (Especially if you have the right size cookie cutter.)

Halloween Skeleton Cupcakes

I got this idea from Women’s Day Halloween Celebrations magazine. I decided to make mine look more like they had crawled out of the grave.

Supplies Needed:

  • Cake Mix or your favorite cake recipe
  • Chocolate Frosting
  • Oreos
  • 4″ Lollipop Sticks
  • Marshmallows
  • White Yogurt covered pretzels
  • Vanilla frosting
  • Black food writing marker
  • black gel writer

Directions:

  1. Make your cupcakes per directions. (I substituted coconut oil for the vegetable oil again. I love the way that tastes.)
  2. While your cupcakes are baking you can prep your Oreos. I took about 10 of them and threw them in my Magic Bullet until they looked like dirt.
  3. Cool cupcakes and frost with chocolate frosting.
  4. Once frosted you can dip the cupcake into the Oreos and it gives it a dirt look on the top.

  5. Next you need to try to smoosh your marshmallow a bit with your hand to make it more flat.
  6. Draw the mouth and nose on the marshmallow with your marker and the eyes with the gel.
  7. Stick the lollipop stick in the marshmallow
  8. Next push the pretzels up the stick and use a little vanilla frosting to secure. (This is pretty tricky, they want to slide down. The trick I figured out was to lean the pretzel forward so the back and front of the hole is touching your lollipop stick.) Once it’s sat a while the frosting will harden some and hold it in place.
  9. Cut two pretzels in half to make arms and secure them with the frosting as well.
  10. Stick your finished skeleton into the cupcake!

I had the hardest time finding yogurt pretzels so I’ll spare you the million trips around the store and let you know they’re in the produce section where they sell the nuts and stuff.
