Biscuit Bowls with Eggs and Sausage Gravy #Recipe

I originally started off this morning making Cat’s sausage gravy recipe with her idea of biscuit bowls. I got the sausage going and all of a sudden my husband took over my kitchen! I got all the ingredients ready and he made the gravy. He decided to experiment and add half and half and brown sugar to Cat’s recipe. It turned out REALLY good! You can always leave out the eggs and and just make biscuits and gravy bowls, which are just as awesome! It almost reminds me of the Bob Evans Sunshine Skillet. Only thing missing is the home fries.

Apple Cream Cheese Bread #Recipe

I have no idea where I got this recipe. It’s in my notebook of recipes I’ve hand copied down. If it’s yours, please let me know and I’ll give you credit! If you have two hours to get this made and cooled, it’s a yummy Saturday morning breakfast. I planned it for last Saturday but didn’t have enough time to get it made because I went grocery shopping first thing and spent way too much time at the store. I ended up still making it on Saturday and we had it for breakfast Sunday morning with some fruit. A nice quick meal (once it’s made) for days when you have to be out the door quickly.

Apple Cream Cheese Bread Recipe

Ingredients

    Filling:
  • 8 oz Cream Cheese
  • 1/4 c sugar
  • 1 egg
  • Bread
  • 2- boxes Jiffy Apple Cinnamon Bread Mix
  • 3/4 c water
  • 2 T vegetable oil
  • 1 egg
  • cinnamon sugar blend

Instructions

  1. Heat oven to 350. Grease loaf pan. In small bowl, combine all filling ingredients and beat at medium speed until smooth, about one minute. Set aside.
  2. In large bowl, combine all bread ingredients and stir 50-75 strokes with spoon until mix is moistened. Pour half of batter into greased pan; pour filling over batter and spread to cover. Pour remaining bread batter over filling. To marble, pull knife through batter in wide curves; turn pan and repeat. Sprinkle with cinnamon and sugar mix.
  3. Bake at 350 for 65-75 minutes until toothpick in center comes out clean. Cool 15 minutes and remove from pan. Cool one hour or until completely cooled before slicing. Wrap tightly and store in refrigerator.

Caramel French Toast #Recipe

Recipe, Breakfast, CasseroleWow! This one was a winner! The boys each had thirds! Normally with a breakfast casserole I’m left with a lot of leftovers. Not this time! Surprisingly the bread turned out perfect. Nice and soft on the inside with just a little bit of crunch on top. The caramel is awesome and makes it so you have no need for syrup. I found this recipe while I was stumbling and pinning. This recipe comes from eat.drink.smile. She said to bake for 50 minutes. For some reason I had to do 15 minutes more. The egg mixture wasn’t completely set for me.

Caramel French Toast Recipe
Print
Recipe type: Breakfast
Prep time: 10 mins
Cook time: 50 mins
Total time: 1 hour
Ingredients
  • 1 cup packed light brown sugar
  • 1/2 cup light-colored corn syrup
  • 1/4 cup butter
  • Cooking spray
  • 10 (1-oz) slices French bread (I used fresh French Bread. I cut it and froze it so it wouldn’t go stale or go bad.)
  • 2 1/2 cups 1% low-fat milk (I used 2%)
  • 1 Tbsp all-purpose flour
  • 1 1/2 tsp vanilla extract
  • 1/4 tsp salt
  • 2 large eggs
  • 2 Tbsp granulated sugar
  • 1 tsp ground cinnamon- Instead of using separate sugar and cinnamon, I used the pre-made store bought mix.
Instructions
  1. Combine first 3 ingredients in a small saucepan. Cook over medium heat 5 minutes or until mixture is bubbly, stirring constantly. Pour mixture evenly into a 13 x 9-inch baking dish coated with cooking spray.
  2. Arrange bread slices in a single layer over syrup in dish.
  3. Combine milk and next 4 ingredients (through eggs) in a large bowl, stirring with a whisk. Pour egg mixture over bread slices. Cover and refrigerate for 8 hours or overnight.
  4. Preheat oven to 350°.
  5. Combine granulated sugar and cinnamon. Sprinkle evenly over bread.
  6. Bake at 350° for 50 minutes or until golden. (Took me 15 minutes longer because egg mixture wasn’t set.) Let stand for 5 minutes before serving.

Strawberry Muffin #Recipe

Recipe, fresh strawberriesThis morning I woke up and wanted to start the new year with fresh, from scratch muffins. I had a bunch of fruit leftover from my New Year’s Eve “Party” so I looked to see what I had the most of. It turns out I had strawberries. I’ve never made from scratch muffins before, besides apple, so I had no idea where to start. I did a quick Google search on my phone for strawberry muffins and came across this recipe from A Recipe A Day. It looked simple, yummy, and best of all I had all the ingredients without running to the store! To make it even more amazing that I made these muffins from scratch, I didn’t pull out my mixer, so I even mixed everything by hand! Her recipe calls for mixing together cinnamon and sugar to top the muffins. I already had the store bought mixture, so I just sprinkled some of that on top. I don’t think I used enough, and next time I’ll definitely add more. Here’s her recipe:

Strawberry Muffin Recipe

Ingredients

  • 1/2 c butter, softened
  • 3/4 c sugar
  • 1 egg
  • 2 c flour
  • 2 t baking powder
  • 1/2 t salt
  • 1/2 c milk
  • 1/2 t vanilla
  • 2 c chopped strawberries
  • 3 t sugar
  • 1/2 t cinnamon

Instructions

  1. Preheat oven to 400º.
  2. Cream butter and sugar. Add egg and mix well.
  3. Sift flour, baking powder, and salt in a small bowl. Add flour mixture and milk alternately to butter mixture. Add vanilla. Gently stir in strawberries.
  4. Spoon batter into muffin pans.
  5. Combine sugar and cinnamon and sprinkle over muffins. (If you cheat like I did and use the shaker cinnamon sugar combination, make sure you sprinkle enough!)
  6. Bake at 400º for 20-25 minutes.
  7. Makes one dozen muffins.

Land O Lakes Eggs #Giveaway

My first giveaway for the Anniversary week is a Land O Lakes eggs prize pack!

LAND O LAKES® Eggs are backed by more than 90 years of experience in delivering premium, quality dairy foods that families can trust. All LAND O LAKES® Eggs are “eggstraordinary,” because they are produced by hens fed a premium vegetarian whole grain diet consisting primarily of whole ground corn and soybean meal, with no added hormones, antibiotics, animal fats or animal by-products. These eggs are gathered at the peak of the hens’ egg-laying cycles, which can make the eggs more delicious.

I used my eggs to make McDonald’s Style sausage egg and cheese McMuffins. I love my homemade McMuffins. They’re nowhere near as greasy as the McDonald’s alternative and because I get to choose my own ingredients I can use low fat or low calorie ingredients that still taste great.

Land O Lakes Eggs Egg Muffin Sandwich

Ingredients

  • English Muffin
  • Egg
  • Cheese
  • Sausage
  • Non-Stick Cooking Spray

Instructions

  1. Separate your English Muffin and place in toaster.
  2. Spray the inside of a coffee mug with non-stick cooking spray and break your egg into it. Microwave for 1 minute. (You may want to cover your mug with a paper towel, the egg tends to splatter)
  3. Heat up your sausage according to package directions.
  4. Assemble sandwich. Your egg should slide right out of the mug and be the perfect shape for your English Muffin Sandwich

Natural Bliss Creamer Review and #Giveaway

While I was at BlogHer a few months ago, I got to try Coffe-mate’s new Natural Bliss Creamers. They have three different flavors to choose from: Caramel, Sweet Cream and Vanilla. My favorite is caramel. (That happens to be my favorite anything, though!) The nice thing about Natural Bliss is that it has simple ingredients: Nonfat milk, heavy cream, sugar and all-natural flavors. There’s no additives, preservatives or artificial ingredients.

As consumers become increasingly aware of what is on their plate, the trend in food over the past few years has focused on simplicity and fresh, natural ingredients. The introduction of Coffee‐mate Natural Bliss provides a new, all natural way for people to create their ideal cup, using the simple and natural ingredients they love. Made with creamy dairy and the perfect balance of sweetness and pure natural flavor, it lets the taste of coffee shine through .

I decided to try one of their recipes that they sent me.

Cream Cheese Stuffed French Toast

Ingredients
10 eggs
1 cup milk
1/8 cup favorite syrup
1/2 tsp cinnamon
about 12 thin slices of French bread
2 “spotty” bananas
4 oz cream cheese
Directions
1. In large bowl, whisk eggs and milk. Whisk in syrup and cinnamon.

2. In KitchenAid or using hand mixer, blend bananas and cream cheese until smooth and creamy. (I used my magic bullet the last time I made this and it made it creamier and easier to spread and also distributed the banana more evenly.)

3. In 8×8 baking dish, pour about 1/2 cup of egg mixture into the bottom of the dish, just enough to cover the bottom. Place bread on top of egg mixture to cover as much of the dish as possible.

4. Spread banana/cream cheese over the top of the bread. Cover with a more bread slices.

5. Pour the remaining egg/milk mixture over the top of the bread and cover with plastic wrap. Refrigerate at least 2 hours, but all day or overnight would be ideal!

6. Bake at 350 for 30 minutes. (I have a really old, crappy oven so it normally takes closer to 50 minutes for it to completely set up for me.)

Another tip from Erin: Use rice bread and rice milk for the dish if you are GFCF. And omit cream cheese…will taste great with just the bananas!

One thing I like about this recipe is I buy one loaf of french bread for less than $2 and I get garlic bread/croutons and to make the stuffed french toast twice out of one loaf.  This week I plan on using my loaf to make French Onion Soup, Stuffed French Toast and some Garlic Bread to go with my chicken alfredo. Plus whatever garlic bread is leftover I will cut up to make croutons. YUM!
